PRODUCT HANDLING

HOLIDAY REHEAT SUGGESTIONS :


18 LB. TURKEY

PRE-HEAT OVEN TO 350 DEGREES!

  1. Remove Turkey from refrigeration and rest at room temperature for approx. 30 minutes.
  2. Remove Leg/Thigh quarter portions from Turkey : set aside.
  3. With Wings still intact, carve Turkey Breasts into slices, and place to one side of baking dish.
  4. Pull any additional ‘white’ breast meat, and meat attached to wings.
  5. Pull ‘dark’ meat from Leg/Thigh portions and place on opposite side of baking dish.
  6. Add a cup of stock (use water if stock unavailable) to baking dish.
  7. Seal baking dish well with foil, and heat for 30 minutes.
  8. Uncover baking dish, heat an additional 10 minutes if necessary.
  9. Note : Product is ready when temperature is 165 degrees.





4LB. TURKEY BREAST

PRE-HEAT OVEN TO 350 DEGREES!

NOTE : THIS PRODUCT IS FULLY COOKED, AND READY TO EAT COLD OR HEATED IF PREFERRED.

  1. Remove Turkey Breast from refrigeration and rest at room temperature for approx. 30 minutes.
  2. Pre-carve breast and place into baking dish : We do not recommend reheating whole turkey breast in oven because its difficult to heat to 165 degrees without drying out.
  3. Add a cup of stock (use water if stock unavailable) to baking dish.
  4. Seal baking dish well with foil, and heat for 20 to 30 minutes.
  5. Uncover baking dish, heat additional time if required.
  6. Note : Product is ready when temperature reaches 165 degrees.






SPIRAL HAM

PRE-HEAT OVEN TO 350 DEGREES!NOTE : 

THIS PRODUCT IS FULLY COOKED, AND READY TO EAT COLD OR HEATED IF PREFERRED.

  1. Place ham on a baking dish and cover tightly with foil. Heat ham for approx. 90 minutes.
  2. Note : Product is ready when temperature reaches 165 degrees.






DRESSING AND GRAVY

PRE-HEAT OVEN TO 375 CONVECTION / 400 CONVENTIONAL: DEGREES!

Pan Spray or grease a baking dish.

  1. Pour Product and STIR dressing into pan and level to a depth of around 2 inches for even cooking.
  2. Bake for 30-45 minutes, checking product every 10 minutes thereafter until desired color and texture is reached.
  3. Dressing is done when slightly firm in the center, browning on top : and has achieved 190-200 degree temperature.
  4. Gravy : Heat slowly in either a sauce pan or microwave until 165 degrees : Careful not to scorch.






SIDE ITEMS

  1. Keep side items in freezer until ready to thaw.
  2. Thaw products by placing into refrigerator 1 or 2 days.
  3. Heat products to 165 degrees.




SWEET POTATO CRUNCH

    1. Pre-heat oven to 350 degrees. Cook covered for approx. 30  mins covered, then 10 mins uncovered.
